place apple juice, sugar and cinnamon in a medium saucepan over medium heat; stir until sugar dissolves. bring to the boil, then reduce heat and simmer 8-10 minutes, without stirring or until syrup thickens slightly.
add peaches and nectarines; simmer 5 minutes. lift fruit from syrup and remove skin; cut into thick wedges.
add cherries to syrup; simmer 3 minutes. place in a bowl with the other fruit and refrigerate.
in a medium bowl beat egg yolks, sugar, vanilla and NESTLÉ baking cocoa until creamy.
in a medium saucepan bring cream and milk to the boil; gradually whisk into the egg mixture. return mixture to the saucepan and stir constantly over a low heat until the custard thickens slightly.
transfer custard to a bowl, add plaistowe premium dark chocolate and stir until melted; refrigerate until cold.
