METHOD

  1. in a large saucepan combine butter, dried fruit, sugar, brandy, water, treacle and plaistowe 70% cocoa chocolate, stir over low heat, until well combined and all ingredients are melted.
  2. meanwhile, sift flours, bicarbonate of soda and mixed spice into a large bowl; stir in orange zest. add chocolate mixture to dry ingredients, stir in eggs and mix until well combined. spoon mixture into prepared pan, smooth top. decorate with blanched almonds.
  3. bake 3 hours, or until cake is cooked when tested. brush cake with extra brandy, sherry or rum if desired. cool cake in pan over night.
