  1. preheat oven to 180°c/160°c fan forced. greae and base line a 23cm spring form pan with baking paper.
  2. peel apples; cut into quarters and remove cores. place in a small saucepan, cover with water and bring the boil. reduce heat; simmer 5 minutes or until just tender; drain, cool.
  3. make narrow lengthways cuts into the rounded side of each piece of apple, cutting about 3/4 of the way through.
  4. using electic beaters, cream butter and sugar until light and fluffy. add eggs, one at a time; add NESTLÉ diet apricot yogurt and beat until combined
  5. stir in dried fruit, glace fruit and sifted flours. spread into prepared pan; arrange apple quarters rounded-side up around the edge of the cake, press into the mixture slightly.
  6. bake for 1 1/4 hours or until golden brown and firm in the centre. turn out onto a wire rack and brush with jam. serve warm or cool with extra NESTLÉ diet apricot yogurt if desired.
