METHOD

  1. add plaistowe 70% cocoa chocolate and cream in a heatproof, microwave-safe bowl. microwave uncovered on medium (50%) for 1 minute; stir. repeat process in 30 second intervals, stirring until melted, add brandy, and stir to combine but do not over mix. refrigerate for 3 - 4 hours or until firm.
  2. line a tray with baking paper. roll teaspoonfuls of chocolate mixture into balls.
  3. sift plaistowe dutch processed cocoa into a shallow dish. roll balls in cocoa to coat, shake off any excess. place on prepared tray. refrigerate until firm.
