preheat oven to 200°c/180°c fan forced. lightly grease 4 x 12 hole patty pans.
combine sultanas, currants, dates, apple, zest, juice, nutmeg, mixed spice and water in a large saucepan over medium high heat; stir until mixture comes to the boil; simmer 5 minutes; remove from heat; stir in NESTLÉ Sweetened Condensed Milk, cool.
sift flour into bowl, add almond meal and sugar; rub in butter until mixture resembles breadcrumbs; add egg yolks and water, mix to firm dough.
roll pastry out onto a lightly floured surface to 5mm thickness. cut into rounds using 6.5cm fluted cutter, line patty pans with pastry. spoon heaped teaspoonfuls of fruit mixture into pastry.
combine egg whites with extra almond meal, flour and extra NESTLÉ Sweetened Condensed Milk; mix well. pipe mixture over fruit filling. bake 10-15 minutes or until golden, allow to cool in pans. if desired, dust with icing sugar just before serving.
