in a medium saucepan, combine the milk, vanilla, sugar and butter; bring to the boil. remove from heat.

sift plaistowe dutch processed cocoa and flour into the mixture, whisk until smooth. add egg and egg yolks, whisking until smooth.

heat oil in a large saucepan to 170°c or test with a small drop of mixture, oil will start to bubble rapidly around the edges of mixture. place chocolate mixture into a piping bag fixed with a star nozzle. pipe 10cm lengths of mixture, in batches, into hot oil, cook for 2 minutes or until golden brown, remove churros from oil, place onto paper towel to absorb any excess oil. repeat with remaining mixture.

meanwhile in a microwavable safe bowl, add plaistowe premium dark chocolate and cream. microwave uncovered on medium (50%) for 1 minute; stir. repeat process in 30 second intervals until melted
