METHOD

preheat oven to 180°c/160°c fan forced. line 2 baking trays with baking paper.

sift flours into a large bowl, add ground almonds and sugar. using fingertips rub in butter; add egg and mix to a soft dough. roll out dough between two sheets of baking paper to 5 mm thickness; cut out 60 rounds using 5cm cutter. using small 2cm cutter cut out centres from half of the rounds. place onto prepared trays.

sprinkle top of biscuit rings with flaked almonds. bake 12-15 minutes or until golden. cool on trays.

join biscuits together with mocha filling. dust with sifted icing sugar if desired.

in a medium saucepan over medium heat, combine NESTLÉ sweetened condensed milk, butter, golden syrup, combined nescafÉ blend 43 and hot water; stir until butter melts and mixture comes to boil, reduce heat to low and stir continuously for 5 minutes. add plaistowe premium dark chocolate, stir until melted.
