There is nothing more irresistible than a bowl of liquid chocolatey goodness. Melting chocolate can be a daunting process but it doesn’t have to be with these simple steps.

  1. Melt in the microwave: Place chocolate in a microwave safe bowl. Set microwave to medium (50%) and melt in blasts of 30 seconds at a time (to ensure the chocolate doesn’t “seize”), repeating until chocolate is almost melted (80%). Continue to stir the chocolate and the rest will melt due to the residual heat.  
  2. Melt on a stove: Place chocolate in a bowl. Bring a small quantity of water to boil in a saucepan, reduce to simmer and place the bowl firmly on top, making sure the water is not touching the bowl and that there is no chance of water getting in contact with the chocolate. Stir until chocolate is almost melted (80%). Take off heat and continue to stir the chocolate and the rest will melt due to the residual heat.

Tip: Don’t use a wooden spoon, as the chocolate could be contaminated by the flavours that your spoon has absorbed from previous use. Avoid overheating and contact with steam or water.
