Step 1Heat large frying pan over high heat, spray with oil, cook mince for 5 minutes or until mince is browned. Add carrot and grated zucchini. Mix MAGGI Mexican Nachos Recipe Base with the tomatoes and add to pan. Turn down heat and simmer for 3-4 minutes.
Step 2Place one tortilla into a non-stick frying pan on medium heat, top with 1/8 of the mince mixture and cheese, fold over to form a half circle and cook for 1 minute each side. Keep warm while repeating process with remaining tortillas. Top with tomato salsa.
