preheat oven to 180°c/160°c fan forced. line a 28cm x 18cm lamington pan with baking paper.
beat butter and sugar until light and creamy, add egg yolk and beat well. fold in flours.
press into prepared pan and bake 12–15 minutes. remove from oven, cool slightly.
spread NESTLÉ top ‘n’ fill caramel evenly over base, sprinkle with nuts. combine coconut, extra sugar and extra egg and sprinkle evenly over nuts.
bake 15-20 minutes or until golden. cool in pan before turning out and cutting into slices.
