preheat oven to 180°c/160°c fan forced. line 2 baking trays with baking paper.
beat butter, sugar and egg in a small bowl with an electric mixer until light and fluffy. stir in hazelnut meal and sifted flour and NESTLÉ baking cocoa; mix until well combined. wrap dough in plastic wrap and chill for 1 hour.
roll dough between 2 sheets of baking paper until 3mm thick. using a 6cm biscuit cutter, cut rounds from dough. place on prepared trays. bake for 8 mins or until lightly coloured. stand for 5 mins on trays; transfer to a wire rack to cool.
meanwhile, make filling. using an electric mixer, beat plaistowe premium dark chocolate, butter and hazelnut spread in a small bowl until thick and glossy. join biscuits together with hazelnut filling. dust with extra NESTLÉ baking cocoa.
