place cream, milk, NESTLÉ Sweetened Condensed Milk, cinnamon, vanilla, nutmeg and brandy in a medium saucepan over medium heat; bring to the boil, remove from heat and stand for 30 minutes to allow flavours to infuse.
after standing, remove cinnamon quill and discard; return cream mixture to saucepan over medium heat; heat until just warm; whisk in egg yolk. combine gelatine and boiling water; stir rapidly until gelatine dissolve; stir into saucepan and stir until mixed well; pour into six 1/3 cup (80ml) dariole moulds. chill for at least 4 hours or overnight.
