preheat oven to 160ºc/140°c fan forced. grease and line base of a 28cm x 18cm lamington pan with baking paper.
place sultanas, apricots, peel, walnuts, almonds, flour, cocoa and spices in large bowl.
place honey and sugar in small saucepan. stir over low heat until honey melts and sugar has dissolved. remove from heat, add NESTLÉ dark melts, stir until melted.
add chocolate mixture, egg and brandy to fruit and nut mixture, mix well. press mixture evenly into prepared pan.
bake 35 minutes or until mixture is just firm when pressed lightly in centre. cool in pan before turning out; remove paper, wrap in aluminium foil. leave at least 1 day before cutting into fingers, dust with icing sugar before serving.
