preheat oven to 180°c/160°c fan forced. grease and base line a 20cm deep round cake pan with baking paper.
beat butter and sugar until creamy; add eggs, one at a time, beating well after each addition. beat in plaistowe premium dark chocolate. fold in sifted flour and NESTLÉ baking cocoa alternately with milk.
spoon mixture into prepared pan and bake 45 minutes or until a skewer comes out clean when tested. remove from pan, cool on wire rack. cut cake into 3 horizontal layers.
sandwich layers together with whipped cream and cherries and refrigerate until required.
melt extra plaistowe premium dark chocolate and butter in a medium saucepan over medium low heat, stirring constantly; allow to cool slightly, then refrigerate until spreading consistency.
spread over top and sides of cake.
