METHOD

  1. preheat oven to 180°c/160°c fan forced. grease and line a 28cm x 18cm lamington pan.
  2. prepare sponge cake as directed on packet. spoon evenly into prepared pan; bake 25-30 minutes or until a skewer inserted into the centre comes out clean. remove from pan and cool completely.
  3. place NESTLÉ sweetened condensed milk, golden syrup and butter in a medium saucepan over medium heat. stirring constantly, bring to the boil, then simmer 5 minutes, stirring constantly. remove from heat and cool.
  4. combine NESTLÉ baking cocoa, icing sugar, butter and milk in a large bowl. dip cake into icing then coat with coconut. allow to set.
