preheat oven to 150°c/130°c fan forced. grease and line a 23cm cake pan with baking paper.
sift flour, NESTLÉ baking cocoa and spices into a large bowl. add dried fruits and nuts and stir well to coat in flour.
place sugar and honey in a small heavy saucepan, stir over a low heat until sugar dissolves, approx. 5 minutes. bring to the boil then simmer 8-10 minutes without stirring (when a little of the mixture is dropped into cold water, it should form a soft ball in the water).
stir the sugar syrup into the fruit with the plaistowe premium dark chocolate, mixing as quickly as possible.
turn mixture out onto a bench or board and knead until mixture comes together. press into prepared pan and bake 50 – 60 minutes or until cooked. cool. before serving dust generously with icing sugar if desired.
