1. heat butter or ghee in a large frying pan; add carrots and cook for 10 minutes. add cardamom and milk and bring to the boil. reduce heat and cook, stirring occasionally for 30 minutes or until the liquid is absorbed.
2. slowly add NESTLÉ Sweetened Condensed Milk and sugar, stirring continuously for 20 minutes or until thickened. stir through cashews and almonds.
3. serve in 6 x 1 cup small bowls, garnish with pistachios. serve warm or chilled.
