preheat oven to 190°c/170°c fan-forced. line 10 holes from two, 6 hole (3/4 cup/190ml) texas muffin pans with paper cases.
place dates, golden syrup and boiling water in a heatproof bowl. stand for 5 minutes. stir in bicarbonate of soda.
combine flour, NESTLÉ caramel bits and walnuts in a bowl. make a well in the centre. add date mixture, milk, oil and egg. stir until just combined. evenly divide mixture into prepared pans.
bake for 20 minutes or until cooked through. stand in pans for 5 minutes. turn out onto a wire rack to cool. serve warm with whipped cream, if desired.
