METHOD

  1. preheat oven to 200°c/180°c fan forced. line a 28cm x 18cm lamington pan with baking paper.
  2. sift flour, NESTLÉ malted milk powder, bicarbonate of soda and cinnamon into a bowl and return the husks to the bowl. add sultanas, carrot and sugar, mix well.
  3. whisk eggs and oil together, add to dry ingredients, mix well. spread mixture into prepared pan and bake 35-40 minutes or until a skewer inserted into the centre comes out clean.
