  1. preheat oven to 200ºc/180°c fan forced. line a baking tray with baking paper.
  2. combine salmon, carrot, zucchini, tomato, juice, sunshine milk powder, instant potato, breadcrumbs, mustard and egg in a large bowl; mix well. divide mixture evenly into eight. shape into patties, coat with extra breadcrumbs.
  3. place on prepared tray, bake 15 minutes, turn over and bake a further 15 minutes.
  4. meanwhile, combine sour cream, yoghurt and mint. mix well; serve with patties.
