METHOD

  1. preheat oven to 180°c/160°c fan forced. line a baking tray with baking paper.
  2. combine pumpkin and oil, toss well; place on prepared baking tray and bake 25-30 minutes or until golden and tender.
  3. meanwhile, cook pasta according to packet directions; drain and keep warm.
  4. heat extra oil in a frying pan over medium heat; cook chicken until browned; add onion and cook 2 minutes. stir in pumpkin and pesto.
  5. combine NESTLÉ CARNATION Lite Cooking Cream, MAGGI creamy white sauce mix and water. add to the frying pan, bring to the boil, stirring, then simmer 5 minutes. add pasta, cook just until heated through.
