using a small sharp knife, make a small hole in the base of each profiterole. set aside.
place 1 cup NESTLÉ milk melts into medium microwave safe glass bowl, microwave to melt chocolate according to directions on pack. repeat process with 1 cup NESTLÉ white melts. dip the tops of half the profiteroles in NESTLÉ milk melts and remaining profiteroles in NESTLÉ white melts, set aside. and reserve remaining melted chocolate.
combine remaining NESTLÉ milk melts and 1/3 cup cream in a medium microwave safe glass bowl, microwave uncovered on medium (50%) for 1 minute; stir. repeat process in 30 second intervals until melted to make milk chocolate ganache. repeat process with NESTLÉ white melts and remaining cream to make white chocolate ganache; refrigerate until thickened.
spoon milk and white chocolate ganache into separate piping bags fitted with small round nozzles. using the white chocolate ganache for the milk chocolate topped profiteroles, push the nozzle into base of each profiterole and fill with the ganache. repeat with milk chocolate ganache and white chocolate topped profiteroles.
using reserved remaining melted chocolate [tip, if chocolate has set, microwave uncovered on medium (50%) for 1 minute; stir; repeat process in 30 second intervals until melted] spoon a little on the base of approximately 11 profiteroles (depending on the size of your platter), arrange on a round serving platter, side-by-side in a circle. repeat with another 9 profiteroles and arrange a 2nd layer on the platter. use remaining profiteroles and chocolate to create a 3rd and 4th layer to make the easter stack.
using remaining melted chocolate spoon a little on the easter eggs and decorate easter stack as desired
