METHOD

heat a medium frying pan over medium heat; add onion and garlic, cook 2 minutes. add mince, cook until well browned.

combine MAGGI cook in pot chilli con carne recipe base and water; add to pan with undrained chopped tomatoes, bring to the boil; reduce heat, simmer, uncovered 20 minutes. stir in kidney beans and capsicum, cook a further 5 minutes.

arrange corn chips around the outside of a large serving dish, spoon mince mixture in centre, sprinkle with cheese, place under hot grill until cheese is melted and golden. serve with sour cream if desired.
