  1. preheat oven to 180ºc/160 ºc fan forced. grease and line base of a 22cm round spring form pan.
  2. place dried mixed fruit, dried cranberries, ginger, nuts, flour, NESTLÉ dutch processed cocoa and cinnamon in large bowl.
  3. combine honey and sugar in a small pan; cook stirring over low heat until honey melts and sugar has dissolved. remove from heat, add plaistowe premium dark chocolate, stir until melted.
  4. add chocolate mixture, egg and brandy (optional) to the fruit and nut mixture, mix well. press mixture into prepared pan.
  5. bake for 35-40 minutes (if it is getting too dark on top, cover loosely with foil for the last 10 minutes) or until the mixture is just firm when pressed lightly in centre. stand in pan 15 minutes before turning out on wire rack to cool. cut into thin wedges before serving.
