  1. preheat waffle maker. combine flour, cinnamon, ginger, vanilla bean paste, egg yolks, buttermilk, water, butter and NESTLÉ caramel bits in a large bowl. stir until combined; set aside.
  2. in a small clean bowl, use an electric mixer to beat egg whites until soft peaks form; gradually add sugar and beat until thick and glossy. gently fold egg white mixture into batter.
  3. spray waffle maker with oil, spoon waffle mixture into waffle mould (amount of mixture will vary depending on size of waffle iron), ensure mixture fills all grooves; close lid.
  4. cook for 3-4 minutes, or until golden. serve warm with yogurt or ice cream, and maple syrup, if desired.
