preheat oven to 180°c/160°c fan forced. grease and line a 28cm x 18cm baking pan with baking paper.
place apricots and water in a small saucepan; bring to the boil then simmer until liquid has been absorbed. remove from heat; stir in butter and brown sugar, stir until melted. cool slightly.
sift flour into a bowl; stir in apricot mixture, UNCLE toby’s traditional oats and NESTLÉ white choc bits. press into prepared pan. bake for 30-35 minutes or until golden.
stand 10 minutes before cooling on a rack. when cold, cut into bars.
