METHOD

  1. heat oil in a large saucepan over medium heat to set the scene for the pumpkin and broccoli risotto; add garlic and onion, cook 1 minute; add rice and stir to combine. pour in stock and pumpkin. bring to the boil, reduce heat then simmer, covered, for 15 minutes, stirring occasionally.
  2. add NESTLÉ CARNATION Light & Creamy Evaporated Milk and broccoli and cook the pumpkin and broccoli risotto covered for a further 5 minutes.
  3. serve pumpkin and broccoli risotto with parmesan cheese
