METHOD

heat a medium saucepan over high heat; spray with oil; add chicken and cook until golden. add curry paste, toss until chicken is coated.

add water and pumpkin, cover, simmer 5 minutes. add beans, cook a further 3 minutes.

blend 2 tablespoons CARNATION light & creamy cooking milk and cornflour; add to the saucepan with remaining milk; bring to the boil, stirring constantly. reduce heat, simmer uncovered 5 minutes. serve with rice.
