preheat oven to 180°c/160°c fan forced. grease a 12 hole (1/3 cup/80ml) muffin pan.
beat margarine and sugar until light and creamy. remove 1/3 cup of the mixture and reserve for topping. to remaining mixture, add sifted flour, baking powder, bicarbonate of soda and cinnamon.
combine CARNATION light & creamy cooking milk and egg; mix into the dry ingredients until combined. spoon mixture into prepared muffin pan.
add UNCLE toby’s traditional oats and extra cinnamon to reserved topping, mix well. sprinkle mixture evenly over muffins, using the back of a spoon gently pressing topping into the muffins.
bake 15-20 minutes or until well risen and golden brown.
