METHOD

  1. Preheat oven to 175°C/155°C fan forced. Grease and line 23 x 12cm loaf pan with baking paper.

  2. In a medium bowl combine coconut flour, coconut, cinnamon, almonds, almond meal, goji berries and bi-carb Soda.

  3. Meanwhile in a separate bowl add vanilla bean paste, almond milk, NESTLÉ CARNATION Light & Creamy Coconut Flavoured Evaporated Milk, coconut oil, banana and eggs, mix until combined, add to dry ingredients, gently fold until well combined. Add blueberries and gently fold.

  4. Pour mixture into pan, place extra banana slices on top, bake for 30- 35 minutes or until golden and firm to touch. Chill in the fridge before slicing
