This loaf combines the nutritious and delicious nuttiness of Wattleseed with whole grains, bananas and NESTLÉ CARNATION Light & Creamy Evaporated Milk, making this a filling and tasty snack. These recipes were created by Tracy Hardy, Wattleseed Nutrition.

METHOD

  1. Preheat oven to 180°C. Lightly grease 20×10-cm loaf pan with non-stick cooking spray and set aside.
  2. Whisk NESTLÉ CARNATION Light & Creamy Evaporated Milk, maple syrup, wattleseed and eggs together in a medium bowl; fold in bananas, oats, baking soda and flour.
  3. Spoon mixture into prepared pan. bake for 1 hour or until a skewer inserted into the centre comes out clean.
  4. Let loaf cool completely in loaf pan. Serve warm, cooled or toasted.
