METHOD

heat oil in a large heavy based frying pan. cook onion and bacon 2 minutes. add garlic and zucchini and cook 3-4 minutes. stir in potatoes.

combine MAGGI tasty cheese sauce mix with eggs, basil and milk. pour over vegetables, stirring a little to allow the mixture to coat all the vegetables.

cook over a moderately low heat, without stirring, until the eggs are set and the base is golden brown, but the top is still moist.

sprinkle with parmesan cheese and place pan under a preheated grill for 3-5 minutes or until the top is golden.
