  1. preheat oven to 180°c/160°c fan forced.
  2. heat oil in a medium saucepan, add onions and garlic, cook for 3 minutes, add carrots and beetroot, cook for further 5 minutes. add balsamic and sugar, cook for 5 minutes.
  3. transfer mixture to a baking dish to oven and bake for 30 minutes. cool slightly.
  4. toss warm vegetables with rocket.
