METHOD

  1. place cucumber, capsicum, carrot, avocado, bean sprouts, coriander, mint and peanuts on a bench, ready for rolling.
  2. half-fill a dish, large enough to fit rice paper, with warm water. dip one wrapper in the water for 20 seconds, or until it is just soft. drain off excess water and place on a clean surface.
  3. place a few pieces of each of the vegetables on the wrapper, about 3cm (1¼ in) from the base. fold up the bottom of the wrapper. fold in the sides and roll up to enclose filling.
  4. place on a tray and cover with damp paper towels.
  5. repeat with the remaining wrappers and filling ingredients. cover with plastic film and refrigerate until required.
