  1. preheat oven to 180°c/160°c fan forced. grease and line a 23cm square cake pan.
  2. combine yeast, milk and 1 tbsp of sugar in a small bowl; set aside in a warm place for 10 minutes or until frothy.
  3. sift flour, NESTLÉ baking cocoa and remaining sugar into a large bowl. rub in butter; make a well in the centre, add yeast mixture and egg, stir until just combined. turn dough onto a lightly floured surface, knead for five minutes or until smooth and elastic; transfer to a lightly oiled bowl, cover and set in a warm area for one hour or until doubled in size.
  4. punch down dough, turn onto a light floured surface, add NESTLÉ white choc bits and NESTLÉ milk choc bits, knead to combine. roll into 16 even balls, place into prepared pan, cover, set aside in a warm place for 15 minutes or until slightly risen.
  5. in a small bowl combine extra flour, sugar and chilled water, spoon into a small piping bag with a small round nozzle, pipe crosses onto buns. bake for 25 minutes or until golden and cooked through. serve warm.
