  1. heat a medium frying pan over medium heat; add oil and onion; cook 2 minutes or until onion is tender. add garlic, chilli and spice mix; cook for 30 seconds.
  2. add prawns, stir-fry until just cooked through and remove and keep warm.
  3. add potato and water to the frying pan; bring to the boil; simmer, uncovered for 5 minutes or until tender. return prawns to the pan with lemon juice and parsley; cook just until prawns are heated through.
