whisk together NESTLÉ CARNATION Light & Creamy Evaporated Milk and eggs; stir in shallots, salmon and corn.
spray a medium non-stick frying pan with oil and place over a medium heat. pour in frittata mixture and cook slowly for approx. 5 minutes, without stirring.
remove from heat and place under a pre-heated grill and cook until golden on top and the frittata is completely firm.
allow to stand for 1 minute before cutting into wedges. serve warm or cold with a salad.
bake at 200°c/180°c fan forced for 25 minutes.
