METHOD

  1. heat oil in a large saucepan over medium heat; add onion, cook 1 minute; add rice, cook a further 2 minutes. add stock, MAGGI original seasoning, lemon juice and wine; bring to the boil.
  2. reduce heat and simmer, covered, for 15 minutes, stirring occasionally. stir in chicken and spinach, cook 2 minutes. stir in cheese and serve topped with pine nuts.
