METHOD

  1. preheat oven to 200ºc/180°c fan forced. line a baking tray with baking paper.
  2. combine sweet potato, zucchini, tomatoes, onions and oil in a large bowl; mix until well covered with oil; transfer to the prepared baking tray. bake for 15 minutes.
  3. lay prosciutto slices on top and bake a further 10 minutes or until the vegetables are tender and prosciutto is crisp.
  4. place a bed of spinach leaves onto serving plates, top with vegetables and prosciutto, sprinkle with basil. serve drizzled with combined yoghurt, chives and mustard.
