METHOD

  1. spray a large saucepan with oil and place over a medium heat. add onion and cook for 3 minutes or until soft.
  2. add pumpkin and stock; bring to the boil. reduce heat and simmer, partially covered, for 20 minutes or until the pumpkin is very soft.
  3. puree soup in a food processor or blender until smooth or mash thoroughly with a potato masher.
  4. return to saucepan and stir in CARNATION light & creamy cooking milk and parsley. heat gently without boiling then serve.
