METHOD

preheat oven to 160°c/140°c fan forced. line 2, 28cm x 18cm lamington pans with baking paper.

melt plaistowe premium dark chocolate and butter in a small saucepan over low heat, stirring constantly.

in a medium bowl, beat egg and sugar together until light and creamy; beat in chocolate mixture and nescafÉ blend 43. sift NESTLÉ baking cocoa, flour, bicarbonate of soda and cinnamon; fold into chocolate mixture.

divide between prepared pans and bake 12-15 minutes or until a skewer inserted into the centre comes out clean. cool in pans, then freeze until firm.

remove cakes from pans; return 1 cake to a re-lined pan, top with softened ice cream, then place the second cake on top. cover and freeze overnight or until required.
