Heat a large saucepan over high heat; add oil, onion, pumpkin, carrots and potatoes; cook for 2 minutes; add mild curry powder, stir 1 minute or until fragrant.
Add stock and MAGGI Original Seasoning, bring to the boil; simmer, covered for 20 minutes. Pour into a food processor or blender; blend until smooth.
Return to saucepan, add NESTLÉ CARNATION Light & Creamy Evaporated Milk, reheat the pumpkin and carrot soup without boiling. If desired, serve the pumpkin and carrot soup garnished with chopped parsley or coriander. Swirl with MAGGI Sweet Chilli Sauce if desired into the pumpkin and carrot soup.
