heat water in a small saucepan over low heat. add gelatine and sugar and stir until gelatine dissolves and mixture is smooth. set aside to cool.
in a large bowl, combine mango puree and CARNATION light & creamy cooking milk. pour gelatine mixture into mango mixture and stir until combined.
pour mixture into 8 moulds or dishes and refrigerate for at least 3 hours or until set.
to serve, garnish with mango or fruit pieces and lime zest if desired.
