METHOD

  1. heat oil in medium frying pan over medium heat; add potato and onion, cook 5 minutes or until tender. stir in sliced ham and parsley. remove from pan and set aside.
  2. wipe frying pan clean; heat extra oil in frying pan over medium heat; pour in combined eggs, CARNATION light and creamy cooking milk and extra parsley; cook until just starting to set; turn over, cook until golden.
  3. top with filling, fold over and serve.
