  1. preheat oven to 200°c/180°c fan forced. grease four, 1 cup (250ml) ovenproof dishes or one large 4 cup (1 litre) casserole dish.
  2. heat a large frying pan over high heat. add oil and lamb, cook until browned; add onion and garlic and cook 3 minutes. add carrot, potatoes, mushrooms and tomatoes. stir in combined MAGGI lamb casserole recipe base and water, bring to the boil, stirring frequently. cover and simmer 25 minutes; stir in parsley.
  3. meanwhile, steam sweet potato and mash.
  4. spoon casserole into prepared dishes; top with sweet potato and sprinkle with parmesan cheese. bake 20 minutes or until warmed through and golden.
