heat oil in large saucepan over high heat; add chicken, brown well; remove from pan.
reheat saucepan on medium heat; add garlic and ginger cook 1 minute. add peanut butter, curry powder, MAGGI Sweet Chilli Sauce, lemon zest and water. bring to the boil; add chicken and capsicum, simmer 2 minutes
add broken MAGGI 2 Minute Noodles Chicken flavour and flavour sachet, and simmer for a further 2 minutes, stirring occasionally.
stir in green onions, peanuts and coriander leaves; serve immediately.
