METHOD

  1. heat oil in a medium frying pan over medium heat; cook green onion, capsicum and peas for 1 minute or until just soft; add fish, cook 2 minutes.
  2. blend cornflour with 1 tablespoon of CARNATION light & creamy cooking milk; add to the frying pan with remaining milk and mustard. bring to the boil, stirring constantly, then simmer for 2 minutes. remove from heat; stir in cheese.
  3. divide mixture between 4 individual ovenproof serving dishes. sprinkle with combined breadcrumbs and extra cheese. grill until golden.
