preheat oven to 200°c/180°c fan forced. grease and line a baking tray with baking paper. combine almonds, honey, plaistowe premium dark chocolate and cinnamon in a bowl, stir to combine, set aside.
lay one sheet of filo pastry on a clean work surface. brush liberally with ghee, fold in half to form a rectangle and brush again with ghee. spread one heaped tablespoon of almond mixture along the smallest edge, fold in sides, then roll up firmly to enclose filling, placing seam-side down on prepared tray. repeat with remaining pastry, ghee and filling. bake for 10 minutes or until crisp and golden.
