To start brewing creamy pumpkin soup, melt margarine in large saucepan over medium heat; add onion, cook 2 minutes. add vegetable stock and pumpkin; bring to boil, reduce heat, simmer uncovered 25 minutes or until pumpkin is tender.
Place pumpkin and liquid in blender or food processor, process until nice and smooth for the creamy pumpkin soup; return to saucepan.
Add NESTLÉ CARNATION Light & Creamy Evaporated Milk and nutmeg, reheat, do not boil.
Serve the creamy pumpkin soup with a dollop of light sour cream and chives, if desired.
