METHOD

  1. cook pasta according to directions on packet, drain, keep warm.
  2. meanwhile, heat oil in a frying pan over medium heat; add pumpkin and cook until golden brown. add onion and capsicum, cook 2 minutes.
  3. blend cornflour with 1 tablespoon CARNATION light & creamy cooking milk; add to the frying pan with remaining milk, water and mustard, bring to the boil, stirring. simmer 2 minutes. add pasta, basil and half the pine nuts. cook until heated through.
  4. serve topped with remaining pinenuts and cheese.
